Wiper And True Old Twelfth Night – 2017 Vintage

Old Twelfth Night is our first Orchard Ale, blending apple pressings cropped from the Wiper and True orchard and wort from a traditional farmhouse malt bill. Fermenting spontaneously, we left the blend to mature in French oak for sixty six weeks. Sitting at 6%, this 2017 Vintage is complex: wild, tannic and tart notes are layered with oak and leather, brought together by a crisp apple finish.
