Mills Today


Today is our first spontaneously fermented beer. The wort was produced using the traditional turbid mash method, with a grist of malted barley, raw wheat and rye. It was left in our coolship overnight to be inoculated with wild yeast and bacteria, before being transferred to wood. Today is a blend of three barrels from two brews produced in the winter of 2016
